dc.description.abstract | El tomate tipo cereza (Solanum spp.), representa uno de los frutos más apetecidos a nivelmundial, por sus propiedades y atributos fisicoquímicos; en especial por su alto contenido de antioxidantes. Los principales carotenoides provenientes del tomate tipo cereza son fitoeno, fitoflueno, luteína, β-caroteno y licopeno (Coyago-Cruz et al., 2018), los cuales son tetra terpenos. Los dos últimos, actúan como antioxidantes naturales lipofílicos ampliamente conocidos por su actividad en la prevención del cáncer, afecciones del corazón y a nivel del sistema inmunológico (Monteiro, Obdulio, Balbi, Teixeira Padilha Da Silva Penteado, & Haracemiv Chaves, 2009 | spa |
